Everyone's got them... that one song that forces you to uncontrollably slam the pedal to the floor, or twist the wrist as the case may be...
Here's a couple of my personal favorites:
Bad in Plaid - Mighty Mighty Bosstones
Sugar - System of a Down
Shiver - Horny Toad (Personal favorite on the way to the mountains)
Kiss me Deadly - Reel Big Fish (Remake of Lita Ford's classic)
Bring the Noise - Anthrax and Public Enemy

Yeah, I'm old:
Eruption/You Got Me Now - Van Halen
Red Barcheta - Rush
I like those two as well. Pretty much anything by AC/DC is good driving music. I don't listen to anything but the purr/growl/snarl of the Interceptor V-4s when I'm riding, but "Surfing With The Alien" and "Summer Song" by Joe Satriani make me want to go ride when I hear them. "Lords of Karma" also has some parts that make me wish I was going through triple-digit sweepers. :)

eve 6 "open road song"
Tonight I feel ambitious and so does my foot as it sinks on the pedal
I press it to the floor
I dont need a girl dont need a friend cause my friend lonesome's
Unconditional
Were flying forever bored
And for a moment I love everything
That I see and think and feel
I love my broken side view mirror
Cause its so perfect
Im so perfect youre so perfect youre not here
I hear the change in gear
My pile shakes as I hit eighty on the open road
This is an open road song
The night is becokoning although I have nowhere to go but home
Feels good to be alone
With every turn comes a new frame of mind if I could frame my mind
Where would it hang
I crack a window and feel the cool air cleanse my every pore
As I pour my poor heart out
To a radio song thats patient and willing to listen
My volume drowns it out
Yeah, but thats ok cause I sound better then him anyway any day
Yeah my voice is sweet as salt
I search for comfort and Ive found it where Ive found it many times before
Times before can be forgotten

Chris Rea:http://ensankhorda.manalaa.net/files/ensankhorda/images/Chris_Rea_6_mjf_2002.jpg
If you haven't heard of him but like styles like Dire Straits, Mike Oldfield, Tina Turner, Phil Collins, to name a few, then you'd probably like Chris.
This is from Road to Hell:
http://www.youtube.com/watch?v=060hM-JVClg
Stood still on a highway I saw a woman by the side of the road
With a face that I knew like my own
reflected in my window.
Well
she walked up to my quarterlight and she bent down real slow
A fearful pressure paralysed me in my shadows.
She said: Son
what are you doing here?
My fear for you has turned me in my grave.
I said: Mama
I come to the valley of the rich
myself to sell.
She said: Son
this is the road to hell.
On your journey 'cross the wilderness from the desert to the well
You have strayed upon the motorway to hell.
We'll
I'm standing by a river but the water doesn't flow
It boils with every poison you can think of.
Then I'm underneath the streetlights
but the light of joy I know
Scared beyond belief way down in the shadows.
And the perverted fear of violence chokes a smile on every face
And common sense is ringing out the bells.
This ain't no technological breakdown
oh no
this is the road to hell.
And all the roads jam up with credit
and there's nothing you can do
It's all just bits of paper flying away from you.
Look out world
take a good look what comes down here
You must learn these lesson fast and learn it well.
This ain't no upwardly mobile freeway
Oh no
this is the road
this is the road
this is the road to hell

I would have to agree with Sortarican on Rob Zombie. "Living Dead Girl" is one of my favorites. But if i really want to get the adrenaline pumping "Bawitaba" by Kid Rock gets me going. I wish I knew the rest of the songs everyone is talking about, but i believe that they are before my time.
