So, My company's annual chili cookoff is today and being a self-described aficionado, I had to enter. After getting my crock-pot strapped to the back of the R6, I realized i had to share...

Wooo-Hooooo! My chili won first place...
So I figured I'd post up the recipe...
This is the short version you can prep in about half an hour

Alex's Three-Meat Fastest Chili In The West (actual speed not prep):

4-5 lb. Boneless pork loin - cut across grain into 1 1/2 inch thick chops
1 & 1/2 lb. london broil (or other lean steak) trimmed and cubed
1 lb. chorizo lightly browned
2- 16 oz. cans kidney beans rinsed and drained
2- 16 oz. cans pinto beans rinsed and drained
4- 16 oz. cans crushed tomatoes
5 large anaheim chiles roasted, seeded & chopped
5 large jalapenos roasted, seeded & chopped
5 cloves garlic roasted & minced
1 medium onion chopped fine

Rub pork chops with BBQ rub (see below), sear over med-high heat & place in crock pot
toss cubed beef with BBQ rub and sear. Add to crock pot with everything else.
Cook on low 8-12 hours or high 4-6 (low and slow is always better)
Strap or latch lid, secure to high performance sportbike.
Spin up to at least 92 MPH (because to be the fastest, it has to go faster than mine did)
Unstrap and serve...

Basic BBQ rub (Great on ribs/roasts/steaks whatever...)
1/4 cup salt
1/4 cup brown sugar
3 TBLSP chili powder
1 TBLSP cumin
1 TBLSP garlic powder
1 TBLSP onion powder
1 TBLSP Ground black pepper
mix well, rub your meat.
