Yes, Trichinosis is much less prevalent today, so as long as you aren't eating pink pork you're probably fine.

Yes, Trichinosis is much less prevalent today, so as long as you aren't eating pink pork you're probably fine.

Bacon is cured pork, it is technically already "cooked".

It might seem gross, but you can eat it out of the package lol. How long it stays varies on the amount they smoked it and how much salt/brine they used.

I would smash one of those and love every second of it.

As for cooked pork...due to USDA regulations and whatnot, it is now entirely safe to cook a porkchop as medium/rare-medium. I've taken to cooking them medium (as I do my steaks), and the whole family agrees that they're much more flavorful, moist, and tender. Have cooked chops this way a few times now (on the charcoal grill) and everything's been fine.

Yeah, I've also tried to read up more on what you can get away with, with Pork. Apparently since the nationwide yearly number of cases of Trichonosis has gone down to only a dozen or so, it's much safer. Mostly due to pig farm improvements.

I might do medium, but still wouldn't do medium-rare (like my beef), that's just my paranoid side. But it's nice to know you don't have to char the shit out of brats on the grill, I hate that. They're safe even if a little pink in the middle, woot!
