I would also suggest hitting up performance and trying them on for fit. Depending on the model, performance does have some pretty damn good deals at times too (better than internet even).

I should admit that my roommate brought home a set of Ballistic 5.0's (from Performance) and let me try them on, so I knew how they fit before I bought online. Performance Cycle rocks too

Not all leathers have the pucks, or the ability to put pucks on, but, depending on what you are planing to use them for, it isn't gonna hurt to have them. Pucks also just velcro on, so you can take them off if you don't want them on there. I took the pucks off my street pants and used them on my track leathers.

If you are planning on doing any trackdays, make sure your jacket and the pants have a 360 degree zipper. Since you said you have a Joe Rocket jacket already, you are pretty much stuck with Joe Rocket pants because Joe Rocket zippers are backwards from other brands.
If you are planning on doing track days, pucks might not be a bad idea.
that's the idea, I do plan to start doing track days so I I figured JR was what I had to go with

I have a pair of JR Speedmaster pants. They have the velcro for the pucks and the 360 zipper. I am really happy with them and my wife likes the way my butt looks in them.
They are available in regular and perforated leather.

Does your Joe Rocket jacket have the zipper for the full circumfrence zipper? I have a Joe Rocket jacket and it only has like the 8" zipper on it.

I have a JR Mercury jacket with the 360 zipper. I bought it from NewEnough and it was a little less than $100 to my door.

Yeah, I have a one peice too...specifically bought for track days (which matches one of my bikes paint schemes). On the streets, I have a Suzuki Racing jacket which zips to Suzuki Racing pants (don't ask brand, I dunno), and I just bought a random JR mesh jacket (which only has the 8" zip) for riding to and from work in the summer.

While the pants that accomodate pucks seem to cost more there is, generally, a good reason for that. Pants designed for track duty tend to have a bit heavier construction and will hold up better if you fall down. I would highly recommend, since you plan on doing some track days, that you go with the better construction. I've fallen down a couple of times and have always been thankful for good gear when I stand back up.
You can go with other brands. Every time I've ordered pants with a 360 zipper they have come with both sides, so if it doesn't line up with your jacket you can have someone remove your existing zipper and install the correct one. It's a few buck to have done, but not too bad.

I would just add that you really do get what you pay for. I've seen cheap pants explode on impact.
My one-piece suit was bought new, but 2 years old- at substantial savings.
