Add a poll with a few dates and give folks a few days to respond. Most votes for the day sets that. Then you can start compiling a list of attendees; too many already saying it depends on the date.

I'm going to ask about Sundays for somewhat of my own selfish reasons, but I do realize that Saturdays tend to be "busier" for people than your typical Sunday. There are always UFC events on Saturdays that I like to watch, so when I'm calling, I'll be asking about the 7th, 14th, 21st, and 28th.

The 21st sounds perfect to me, because a month of prep time is more that adequate to nail this down and (I think) it give all us people enough notice to A.) decide on how we're going to eat and drink, and B.) promote it to make it worth everybody's while to go.

Anyway, I'll let y'all know what the office has to say about those dates.
