I wouldn't want to do any soft sand, but for fire roads, it did great! I kept catching myself going (what I considered to be) too fast for the roads. I felt the back end step out a few times and the front wheel didn't want to track well. It's certainly not a true DS adventure bike w/ the small front wheel, but for what we were doing and plan to do in the future, it did great.
As for the tires, they are DS tire. IIRC, Ducati worked w/ Pirelli to make the Scorpions for the Multistrada. I think something a bit chunkier is in order if I decide to take the enduro part of the Strada a bit more seriously.
This was the first time, I've taken her in the dirt.

Angela's Versys has a 17" front too. There are very limited options if you want to go the DS route. Not like the 21" on that VStrom. We just put a MT60 on the front. The Distanzias are supposed to be nice too. They're sumo tires, so a pretty good balance of dirt with being sticky. 80/20 maybe? But your bike will eat up the rear tire in no time. We went with a Mich Anakee 2 on the rear. Really nice on and off road.
